It’s Blueberry Season: Dessert Ideas

It’s that time of year, blueberry season has arrived again. I savor this time of year, because I relish the delectable taste of fresh-picked blueberries. Depending on which region of the country you’re in, your local farmers market should have blueberries available. If you are lucky, you may have a farm nearby which allows you to pick your own (for those of you who really want to get close to your food!)
Blueberries are remarkable enough if eaten on their own, but as part of a dessert, they make an exquisite treat. Here are two seasonal recipes that are sure to delight.
Spiced Blueberry Cobbler (from Ani Phyo’s Raw Desserts)
Crust:
1 cup Medjool Dates, pitted
1/4 tsp nutmeg
1/8 tsp cardamom powder
1 tsp cinnamon
1 cup almonds
Combine cardamom, almonds, nutmeg and dates and grind until a crumbly texture. Add dates until mixture sticks together. Press most of the mixture into bottom of baking dish, setting 2/3 cup aside for the topping.
Filling:
2 cups blueberries
1/2 cup agave nectar
Mix the agave with the blueberries and place on top of the crust. Sprinkle remaining crumb mixture on top of blueberries. A delicious summer treat!
Blueberry-Coco Treat
Coconut Crust (from Raw Food Made Easy by Jennifer Cornbleet)
1 1/2 cups unsweetened shredded dried coconut
1 1/2 macadamia nuts or walnuts
1/2 tsp. salt
1/2 cup pitted dates
In food processor, combine coconut, nuts and salt until coarsely ground. Add dates and process until sticky, crumblike texture.
Press crust into cupcake tray with liners, to form tarts. Add blueberries. You can drizzle with agave nectar and/or add other berries for a flavor explosion.
