Journey to Italy! Spinach with Sun-Dried Tomatoes and Nut Cream
Want to enjoy the indulgence of rich, Italian food without the guilt (and indigestion?)
Try this simple, quick recipe. I usually bring it to potlucks that I go to, and it’s always a hit!
Ingredients:
1 bunch spinach (I prefer baby leaves)
1 cup sun-dried tomatoes (or more, if you choose)
3 cups pine nuts
1/4 cup pine nuts (for garnish)
1 cup water (or more if you like a thinner consistency)
sea salt to taste
1 clove garlic
1/4 cup chopped onion
chopped red pepper (optional)
1. Clean spinach. Set aside.
2. Chop sun-dried tomatoes in food processor and set aside in a separate bowl.
3. Chop onions and garlic in food processor. Add remaining ingredients (except sun-dried tomatoes) to processor and mix until it forms a creamy texture.
4. Combine the nut cream with the spinach until well-coated. Add the sun-dried tomatoes and remaining pine nuts for garnish.
5. Pour a glass of sparkling apple cider (we’ll pretend that it’s wine) and enjoy!
This is a very fulfilling dish, perfect for a lunch or the main dish at dinner.
The More You Know: Low on iron? Eat spinach, it provides an excellent source of iron, without the health risks of eating red meat.

This is quick and easy and something that I know I would enjoy. I love sun-dried tomatoes.
