More Sweets for My Sweet (Readers)
I have a weekly ritual of making desserts on Sunday. (Raspberry truffles are a great way to begin the week!) Here are some dreamy delights that you can create for your own family, using the natural sweeteners I shared with you earlier.
Coconut Walnut Balls (adapted from The World’s Healthiest Foods)
Ingredients:
2 cups walnuts
1 cup pitted dates
2 TB lemon juice
1/4 tsp lemon zest
pinch of sea salt
1 cup unsweetened coconut
Process walnuts in food processor to fine crumbs. Add dates, lemon juice, lemon zest and sea salt. Process ingredients until mixture holds together (before it forms until a ball). Form into 2 inch balls. Place coconut on wax paper and roll each ball into the coconut until completely covered.
These treats are easy to make…and eat!
No Bake Cookies (from goneraw.com)
Ingredients:
1 cup Rolled Oats
½ cup Maple Syrup or Date Syrup(dates blended with water)
½ cup Almond Butter
¼ cup Cocoa or Carob Powder
Preparation: Mix ingredients together in a bowl. Using a tablespoon, shape cookies onto wax paper. You can refrigerate to harden…or eat right away.
I looooove these cookies!
By the way, if you have a ”cookie monster” that resides in the home like I do (okay, it’s really me, lol), you may want to double these recipes.

I do too! They are SO easy to make and I prefer these to baked cookies actually.

Over the past few weeks, I have completed both recipes and they are both hits with my husband. I know this isn’t news to many, but discovering the natural sweetness of dates and figs has been an absolute joy for me. My mother used to give us carob in place of chocolate when we were kids. Re-discovering carob (and its versatility!) has also been a pleasure. Thanks for the recipes. I plan to use them often as I shift away from artificial things to more natural sweeteners.
